''Shui Xian" (also spelled Shui Hsien) - narcissus or water or daffodil
This great and rare oolong - Zhangping Shui Xian Tea has a long history,which can be traced back to 1914.People in Yuan Dynasty have started grown this tea,and when Ming and Qing Dynasties,there were special small tea production factories.This tea has ever gained gold awards in Panama Expo and Shanghai Expo.
Zhangping Shui Xian Tea is very different in manner and taste from Wuyi lao cong Shui Xian. the fermentation of Zhangping Shui Xian is lighter,which is semi-fermented.This tea all compressed into cakes ,permeable paper wrapped and then a vacuum bag outside,which is featured only in Zhangping Shui Xian tea.
Brewing Guide:
Awake Tea:
Pour in boiling water until overflow slightly for rinsing the tea leaves but not for drinking.Then pour out the water.
The first infusion:
Hold the kettle up high so that the boiling water pour into tea pot, possibly forming a circle. This helps mix tea leaves and hot water evenly
Serving:
Since Shui Xian/Shui Hsien are good for multiple servings, you should remove tea liquor completely from tea pot for each serving so that tea leaves are not soaked in tea liquor between servings.
Shui Xian/Shui Hsien can be brewed for 3-8 times before the tea starts to lose its flavor as your like. Each brewing time can be slightly longer than the previous.
Aftertaste:
Shui Xian/Shui Hsien have delightfully fresh floral taste and aroma.Usually more oxidized tea will have a stronger aftertaste. You can now smell the empty tea cup as well since the aroma stays with tea cup.
