The legend of white tea Bai hao yin zhen
According to the Chinese legend, almost 5,000 years ago the emperor Shen Nung was traveling in the countryside. The water was foul and unfit for drinking, so he ordered it to be boiled. Suddenly the wind blew a tea leaf into his cup of hot water. The curious emperor let the leaf steep, then drank the brew. Tea was bornt. White tea became revered during China's Song Dynasty (960-1279). It was the choice of the royal court and was given as tribute to the emperor.
The different production methods between green tea and white tea
One of the big differences between green and white tea is how the tea is processed. To make white tea the pickers pick the bud and the leaf together and then separate it into the four general grades creating the three types of white tea, Bai Hao Yin Zhen (Silver Needle), Bai Mu Dan(White Peony), Shou Mei, and Gong Mei. Unlike green tea production which is exposed to relatively high temperatures to remove moisture, white tea is dried naturally using sunlight or lower temperature in doors helping to preserve tea polyphenols.
Get to know the Silver needle white tea
Silver needle white tea, Baihao Yinzhen, also known as White Hair Silver Needle, is a white tea produced in Fujian Province in China. Amongst white teas, this is the most expensive variety and the most prized, as only top buds (leaf shoots) are used to produce the tea. Genuine Silver Needles are made from cultivars of the Da Bai (Large White) tea tree family. There are other productions that look similar to downy leaf shoots but most are green teas, and as green teas, they taste differently and have a different biochemical potency than the genuine white tea Silver Needle. It is commonly included among China's famous teas.
How to identify the quality of the silver needle white tea
High quality Silver Needle should be made up of large, healthy tea buds with most of their white fuzz intact. When infused, the buds will turn to a light green color right away. The color of the infusion is like a light honey. When compared to infused green tea, it will appear slightly yellow. The fragrance is light, akin to freshly bloomed flowers. The flavor is more juicy than dry, filling the mouth with a smooth and lingering sweetness.
As with all white teas, it is best prepared with water below boiling (at around 75 to 80 degrees Celsius or 167 to 176 degrees Fahrenheit) and produces a slightly viscous glittering pale yellow color with evidence of floating white hairs that reflect light. Baihao Yinzhen is said to smell of "fresh-cut hay", and the flavour is described as sweet, vegetal, and delicate. Steeping should be longer than other white teas; up to 5 minutes per brew, and the volume of tea to be used can be higher. There are few parallels to be drawn as the taste is not similar to any other teas but Bai Mu Dan, except the latter is fuller but not as sweet and delicate.
Like green and yellow tea, white tea is considered cooling in Chinese Medicine. Silver Needle in particular is considered a very effective cooling tea and used to treat inflammation, dental problems, fevers, and skin problems. It is common for countryside Chinese to age Silver Needle (4-6 years) just for its medicinal function. We also know from Western medicine that one of the health benefits of white tea is its high concentration of antioxidants.
